This is one of my favorite things to make for breakfast when I'm craving a cheese Danish or when I'm just plain ol' tired of scrambled eggs and oatmeal. And, although you can make this in the microwave (and it's good when you do that), I always do it on top of the stove, as described in the note below. I agree with the author that it just takes it to the next level. Microwaved is good, though, when you're pressed for time. Also, sometimes I'll pour a bit of cream over the top of the Danish when it's done. Yumm-O!
Mock Danish
2 oz. cream cheese (soften in microwave)
1 egg
1 T. Splenda
1 t. lemon juice
1 t. vanilla
Mix softened cream cheese and egg. Add remaining ingredients. Microwave on high for 2 minutes or until center is set.
Amount Per 1 serving: Carbohydrate 4g 1%, Dietary Fiber 0g 0%, Protein 11.43g 23%
NOTE: All you gals that are microwaving the mock Danish are missing out. I heat the cream cheese slowly in a saucepan, add the beaten egg, Splenda, and lemon extract, and then beat it with a whisk until it's perfectly blended. I heat it on low, stirring occasionally, until it's the texture of cheese Danish filling. Then I savor my bowl of mock Danish and remind myself that I get to have another one in 24 hours.
