 Slow Cooker Provencal Beans with Chicken and Sausage

I got this recipe from a TV show recently.

Slow Cooker Provencal Beans with Chicken and Sausage
Makes 6 servings

* 1 tablespoon olive or canola oil
* 6 or more, boneless skinless chicken thighs
* 2 slices bacon, thick sliced and double smoked if available, diced
* 1 1/2 cups chopped onion
* 2 large carrots, peeled, diced
* 4 ounces smoked sausage, chopped (chorizo, kielbasa, etc)
* 3 large cloves garlic, minced
* 1 teaspoon Herbes de Provence or dried thyme leaves
* 1/2 teaspoon each: pepper and salt
* 2 cups low sodium chicken broth
* 1 tablespoon tomato paste
* 2 tins white beans, drained, rinsed
* 1/4 cup chopped fresh parsley
* Croutons to cover, about 2 cups

1. Heat oil in very large skillet or in Dutch oven until hot on medium high burner. Add chicken thighs; brown on both sides. Transfer to slow cooker.

2. Add bacon to same skillet; cook 2 minutes, stirring often. Stir in onion and carrots; cook 5 minutes, stirring occasionally, until vegetables begin to brown and soften. Stir in sausage, garlic and seasonings; cook 5 minutes more, stirring often.

3. Add broth and tomato paste to vegetables; stir until mixed. Stir in beans.

4. Pour beans mixture into slow cooker over chicken. Cover and cook on High for 4 hours or Low for 7 to 8 hours, or until chicken is fully cooked.

5. Stir in parsley. Sprinkle croutons to cover top. Close lid; cook on High for ½ hr more.

My sister buys canned Cannellini White Beans but I just buy whatever is on sale. They're in the grocery isle right beside the canned kidney beans, black beans etc.

OK, thanks. I have lots of dried beans. I am on this slow-burning-carb diet where you eat lots of eggs, beans, vegetables, meat and no fruit, bread rice etc. So I have beans coming out my ears.

Moody I'm doing the low carb thing too so I can get in shape for summer. It's not bad, but I miss fruit.

eta- and thank you for the recipe, I use my Crock-pot all the time so this is great!
