I'm not sure if I've posted this recipe here before but I made it last night and it's darn good. (I actually doubled the recipe and made two - froze the second one.) I just served it with steamed green beans and small potatoes and we're only two people so there's plenty left over for sandwiches or a second meal later in the week. (Serves 4 to 6)
Ground Turkey Meatloaf with Dried Cranberries
Ingredients:
1 1/2 pounds ground turkey
1 box turkey stuffing mix (That's called for in the original recipe - I used 1 cup quick cook rolled oats)
2 eggs
1/3 cup skim milk (or water)
1 medium onion, grated
1 or 2 carrots grated (depending on size)
1/2 cup dried cranberries
1/2 tsp salt
1/2 tsp thyme
1/2 tsp sage
1/2 tsp rosemary
1/2 tsp pepper
1/2 tsp poultry seasoning
Directions:
Preheat oven to 350
Combine all ingredients in a large bowl, mix well
Transfer to a sprayed or greased loaf pan
Bake uncovered for 50 or 60 minutes
Remove from pan and allow to rest for 10 minutes or so before slicing
