| If you're doing low carb and missing bread, here's an easy recipe for a wonderful tasting and textured muffin. I don't even get the mixer out. I just mix these up with a whisk.
These muffins are great for breakfast, with either a pat of butter or a dab of cream cheese (flavored or plain). And, there are all sorts of variations you can make to this recipe. See the notes that follow for suggested variations and ordering information for DaVinci syrups and flaxmeal. And, just in case you didn't already know, flax is a rich source of dietary fiber and alpha-linolenic acid, so not only does it have a wonderful nutty flavor, but it's good for you, too. Flaxmeal Cinnamon Muffins (Low Carb) 6 T. vegetable or corn oil (I use canola oil.)3 large eggs 4 T. vanilla sugar free DaVinci syrup (made with Splenda) (or flavor of your choice)2 T. water (or a total of 6 T. Davinci syrup)1 T. vanilla extract 1 c. flaxmeal 1/2 t. baking soda 1/2 t. baking powder 2 T. cinnamon Mix oil, egg yolks, syrup, water, and vanilla. Add all dry ingredients and mix well. Let sit for about 5 minutes, until it thickens, slightly. Divide evenly into 12 greased muffin tins. Bake at 350° for approximately 12 minutes. Remove from pan. Per Serving: 146 Calories; 12g Fat (74.0% calories from fat); 4g Protein; 4g Carbohydrate; 3g Dietary Fiber; 47mg Cholesterol; 91mg Sodium. Exchanges: 1/2 Grain (Starch); 1/2 Lean Meat; 2 Fat; 0 Other Carbohydrates. Variations (comments that came with the original recipe):- Add a dash of salt and a little pumpkin pie spice and sweet & low brown sugar sub.
- I cut a few of them in half and filled them with a cream cheese frosting made from cream cheese, Splenda and vanilla. They were very good. I think I'm going to try them next time with some chocolate Da Vinci syrup and fill them with fresh whipped cream!
- I made these this morning with the Splenda instead of Davinci syrup and used 1 T. cinnamon, 1 t. nutmeg, and a few shakes of allspice, ginger, and cloves.
- I substituted almond flour for 1/2 the flax, used coconut SF syrup, added 1/4 c. coconut, and iI've experimented each time. Last time I added about 1/4 c. pumpkin. Very yummy. This time I used gingerbread Da Vinci, added some allspice, and walnuts.ncreased the SF syrup a bit.
- I've made these as a savory muffin. I added finely chopped sun-dried tomatoes and black olives, parmesan cheese, oregano and a little garlic. They were delicious!
- I made a double batch today with Da Vinci butter rum flavor, a little squirt of liquid Splenda, and a dash of salt. I made them in a 9x13 pan and baked at 350 for 30 minutes. They had a nice texture, but they tasted "flaxier" than usual. This is the first time I made them without cinnamon. I wonder if lack of cinnamon is what made the difference.
- I made these Friday night, but I experimented. I used 4 eggs, added 1/2 can of pumpkin (about 7/8 cup), added powdered Splenda to the batter to sweeten it (in addition to the 4 tbls of Vanilla Davinci), used about 1 1/4 cups of flax and about 1/2 cup of wheat bran. I also upped the cinnamon a bit due to the larger volume. Then, after putting it into the muffin pan - I put a small teaspoon of Splenda sweetened cream cheese into each one and gently covered it with the batter. They blew out a little bit while baking, but not badly. They are dreamy. Texture is terrific and the taste is great!
- I use the chocolate syrup for mine, too. I also add a little extra dark cocoa (2 T.) to the protein powder for extra chocolate flavor and an additional t. vanilla extract to the wet ingredients. Yummy!
- I made up a little softened cream cheese with vanilla syrup and spread it on each half. They were great!
- Instead of a muffin tin I oiled and floured a bread pan, using vanilla protein powder to powder the pan-OMG it is good!!
Notes:
I've picked up one pound bags of flaxseed meal at my local Kroger (in the produce section, of all places!), but you can also order it online. A link to the manufacturer is below. I’ve ordered flaxseed meal and almond flour from Bob's Red Mill for use in this and other recipes and was very pleased with their packaging and delivery. | Hey inky, Re flaxseeds - I've been eating low on the food chain for a few years now and I add a tablespoon of flaxseeds to my cereal every morning - guess what? I read on-line a couple of days ago that "Its high content of alpha linolenic acids has made the ancient flax seed become our modern miracle food. Alpha linolenic acid is a type of plant-derived omega 3 fatty acid, similar to those found in fish such as salmon." It also stated that flaxseed can help boost libido! Look out! | You all probably already know this, but I learned something new at our work retreat, yesterday. We were sitting around, shooting the breeze over lunch and our IT director said he's been taking fish oil for about two months and loves it. It's called Omega Brite, and he takes three capsules a day. Since he's started taking them, his high blood pressure has gone down to normal, his eye sight has improved, and the joint problems he used to have, have disappeared. He said he's also lost 7 pounds, without even trying, and the only thing he's doing different is taking these Omega Brite capsules.
It was really funny, because it turned out three other people sitting around the table are taking daily doses, too, and all said their cardiologists had recommended it. It's supposed to be good for your heart and your cholesterol.
Anyway, I went to the web site, today, and signed up for automatic monthly shipments. I figure it can't hurt. And, when you read the medical reports on the web site, it almost sounds like a miracle drug.

I'm always wary of those drugs or vitamins that claim they are close to or are miracles drugs but since my ov yesterday and my BP being higher maybe I should look into this capsules. I'll wait till you try them for a bit. I hope your report turns out great. :heart: |

| I'll keep you posted, Frannie. I read -- and my coworker confirmed -- that you can feel the effects as soon as two days after you start taking the capsules. This particular brand is more concentrated than other brands available locally and was developed by doctors at Harvard Medical School and is recommended by the American Heart Association. I figure if Omega Brite is good enough for three of my coworkers' cardiologists to take themselves, it's good enough for me. I'll let you know. |
