Here's the recipe I mentioned in today's "What for dinner?" thread, and as I said there, it's probably one of the best grilled pork chop recipes I've tried in a very long time. I brushed both sides of my chops with the thick "marinade" mixture and let them rest in the fridge for about an hour before broiling. Then, I broiled the first side for about 5 minutes; the second side for about 8. By that time, they were thoroughly cooked, but still juicy, and the edges were crispy. Yum! This one's going in my "keeper" file. I hope you'll give it a try, too. I don't think you'll be disappointed.
Asian Grilled Pork Chops
1/4 c. olive oil
1 T. soy sauce
2 cloves garlic, crushed
1 T. minced ginger
1 T. Dijon mustard
salt, to taste
freshly ground black pepper
6 center cut pork loin chops
1. Mix the oil, soy sauce, garlic, ginger, mustard, salt and pepper, and brush on the pork chops. Refrigerate for at least 30 minutes or overnight.
2. Preheat the grill.
3. Grill the chops for 5 to 8 minutes on each side, depending on the thickness. Let the chops rest on a plate for 1 or 2 minutes before serving.
