Salmon Teriyaki
1 pound of salmon fillets, cut into 4 equal portions
1/2 cup low-sodium, wheat-free tamari soy sauce
2 tablespoons rice vinegar
3 teaspoons chopped fresh garlic
3 teaspoons of fresh ginger, minced
1 1/2cups thawed apple juice concentrate
1/2 cup finely chopped green onions
1. Combine all ingredients except green onions and salmon in blender containter and process.
2. Place salmon in glass baking dish and pour the marinade over salmon. Marinate for 10 minutes to 1 hour. Turn salmon occasionally to distribute marinade evenly.
3. Preheat grill or broiler. Grill or broil for 3 to 5 minutes on each side or until fish flake easily.
