PostSubject: Pennsylvania Dutch Vegetable Soup with Butter Balls   August 25th 2008, 3:59 pm

The Pennsylvania Dutch have dozens of traditional soups, many of which are often served as a main course or one-dish meal. The butterballs are actually small dumplings and are often added to many other soups as well.

Pennsylvania Dutch Vegetable Soup with Butter Balls

For the soup:
8 c. (2 L) beef or chicken stock
4 medium potatoes, peeled and diced
2 carrots, diced
2 turnips, peeled and diced
2 tomatoes, diced
1 c. (250 ml) fresh, canned, or frozen corn kernels
1/2 c. (125 ml) rice
Salt and freshly ground pepper to taste

For the butterballs:
6 T. (90 ml) all-purpose flour
2 t. (10 ml) butter
Salt to taste

Combine the ingredients for the soup and bring to a simmer over high heat. Reduce the heat and simmer covered until the vegetables and rice are tender, 20 to 30 minutes. To make the butterballs, mix the flour, butter, salt, and enough water to make a stiff paste. Roll into small balls and boil in the soup for 5 minutes before serving. Serves 6 to 8.

I just found this recipe Inky and I think I'll give it a try. I usually make minestrone, chicken noodle, cream of broccoli,etc. but I like the idea of rice in the soup. Not sure about the dumplings/butterballs, but I'll probably try them the first time around. Also, turnips. Never used them except for stock, but I'm game.

Was! How did you know?! lol! I think that was the first time I actually found Baldwin truly funny. Classic moment! However, I think I'll be skip Schweaty balls in the soup. (Still laughing.. thanks for that!)

Mappy, have you ever tried corn chowder? If not, you might want to try the Chicken and Corn Chowder listed in the recipe index. It's one of our favorites . . . well, that and cabbage soup.

I never got that far in the recipes,Inky. DH loves Corn Chowder and if it lists cabbage in the ingredients, I'll eat it LOL

Both soups sound wonderful! DH loves creamed corn. If he shops, he'll buy it on occasion. When I made the black beans, rice and corn side dish (with the meatloaf) I added whole frozen corn and a can of cream corn to moisten it a bit.

The cabbage soup sounds like stuffed cabbage, only unstuffed! Growing up, a close friend was Polish and I acquired a taste for guompke early on LOL Yum. My tummy is having a bit of a nostalgic rumble.

No, no, no!!!! lol! There's no cabbage in the chicken and corn chowder! The cabbage soup is a different recipe (see the index) and is much like Kim mentioned in Jessie's thread.

Oops! I see you've figured out the cabbage thingy. I've got a recipe somewhere for UNstuffed cabbage rolls. Ummmmmmm. I'm going to have to dig around and see if I can find it.

Pennsylvania Dutch Vegetable Soup with Butter Balls
