Pimp's peanut butter and jelly cookies reminded me that I've never posted my grandson's favorite cookie recipe . . . an old one that I tore from a magazine years ago. Enjoy! But, beware. These cookies are addictive! They go great with a tall, cold glass of milk or some orange Bavarian cream (recipe posted separately).
Irresistible Peanut Butter Cookie
3/4 c. Jif Creamy Peanut Butter
1/2 c. Crisco shortening
1 1/4 c. firmly packed light brown sugar
3 T. milk
1 T. vanilla
1 egg
1 3/4 c. all-purpose flour
3/4 t. salt
3/4 t. baking soda
Heat oven to 375°. Combine peanut butter, Crisco, light brown sugar, milk, and vanilla in large bowl. Beat at medium speed of electric mixer 'til well blended. Add egg. Beat just until blended. Combine flour, salt, and baking soda. Add to creamed mixture at low speed. Mix just until blended. Drop by heaping teaspoonfuls 2 inches apart onto ungreased baking sheet. Flatten slightly in crisscross pattern with tines of fork.
Bake at 375° for 7 to 8 minutes or until set and just beginning to brown. DO NOT OVERBAKE. Cool 2 minutes on baking sheet before removing to kitchen countertop. (I cool them on clean dish towels.) Yield: 3 dozen cookies.
