And, this one's for me! It's low carb, and I love it!
Broccoli Salad (Low Carb)
2 bunches broccoli florets
1 lb. crumbled cooked bacon (reserve drippings)
8 oz. (2 c.) shredded cheddar cheese
1 med. chopped onion
Dressing:
1 c. mayo
4 t. white vinegar
1/2 c. bacon drippings
6 T. Splenda to taste
Mix first four ingredients and toss with dressing. Chill. Best if refrigerated overnight. Yummy!! I also love this with shredded mozzarella in place of the cheddar.
