PostSubject: Brown crispy turkey   November 12th 2011, 4:40 pm

I have a dilemma and I know the oh so wise members of this board can help me. My daughter just moved into a new house . She wants to host Thanksgiving dinner. The problem is she has not yet bought a stove. She doesn't cook so she is taking her time trying to find a used one. Anywho, she hasn't thought about how she is going to have Thanksgiving without a stove. I could cook the bird here, but it would be a pain in the butt to transport. I have a roaster that will fit a 16 lb bird. I used it once for turkey and the meat was good but the skin was white and yucky. My favorite part of the bird is the skin, brown and crispy. Does anyone know how to get crispy skin in a roaster? My mother did but I never found out how. Thank You all in advance

From yahoo answers. Not sure it will work but it sounds like the question has been asked before!

Is there a way to get crispy skin on a turkey in a roaster oven only??
I will be cooking a turkey in an electric roaster and all the recipes I have looked up say to put the turkey in the over for last 45mins. However I will not have an over available to use. Is there a way to get a crispy skin on a turkey just using my electric roaster????

With any cooking method/environment, even a roaster oven, the way to achieve a crispy skin on poultry is to remove the moisture from the surface. The presence of moisture has a steaming effect; the skin will be cooked just fine, but it will never have a chance to dry out and crisp up.

So rubbing the skin---the parts you want to be crisp---with vegetable oil (or butter, for added flavor) will result in crisp skin. Depending on the temperature and air circulation in your electric roaster, it may take 5 minutes, or it may take 20-30 minutes.

I've always found that butter browns the skin better than oil.

Yes for the butter.
Best turkey ever. Soak in brine water over night, drain, dry skin,
then take hand insert between the breast and skin, insert stick of butter on both sides of breast keeping about a third of each to rub on outer skin.

don't rub butter on turkey when you first put it in oven, save it. Cook turkey til last 30 min or so, then rub with butter and finish cooking it uncovered.
